VEGAN BERRY CRUMBLE

We're huge fans of this Vegan Berry Crumble recipe by @amazed_daisy 

The ground almonds paired with Haskapa powder makes for a great flavour combination. Serve with fresh fruit and vegan cream for a decadent desert.

Ingredients:

  • 1/2 cup of rice flour
  • 1 cup of cornflour
  • 1/2 a cup of ground almonds
  • 130 ml of vegetable oil
  • 1/2 a cup of sugar
  • 1 teaspoon of baking powder
  • A couple of handfuls of blueberries 
  • 2 apples, peeled and chopped
  • Lemon zest (1 lemon)
  • Pecans (optional)
  • 4 teaspoons of Haskapa berry powder

Method:

  • Preheat oven to 180C/Gas Mark 5
  • For the base, mix together the rice flour, cornflour, ground almonds, vegetable oil, sugar, and baking powder in a large bowl (add a bit of water if the dough is too dry)
  • Knead together
  • Bake 2/3 of the dough in a medium sized oven dish for 15-20 mins, or until golden brown
  • Remove from the oven and top with the blueberries, apples, Haskapa powder, lemon zest, pecans, and a teaspoon of sugar
  • Sprinkle with the rest of the dough
  • Bake again for 20 to 25 mins
