DELICIOUSLY PURPLE PANCAKES

These haskap berry pancakes look so impressive and they're also quick and easy to make.
"Haskap berries are high in polyphenols and anthocyanins and one to two teaspoons is equivalent to a handful of these berries. I just loved how deep the colour of my pancake batter was after I added the powder" @janeyfoodlover
60 g flour
20g coconut flour
20g protein powder
4 teaspoons of Haskapa berry powder
1 teaspoon baking powder
4 teaspoons psyllium husk
Milk or water to dilute
Mix everything together and add water or milk to obtain pancake like consistency. Fry in a pan with a bit of oil. Fill with greek yoghurt sweetened with a sweetener. Serve with fresh berries. Enjoy!
