This week's recipe is this mouth-watering vegan apple & haskap crumble courtesy of nutritionist Elle Frizzell (@ellefrizell).
-3 small apples
-¾ cup blueberries
-Squeeze lemon juice
-4 tsp haskap berry powder
-½ tsp Ceylon cinnamon
-½ cup gluten free oats
-¼ cup chopped pecans / almonds
-¼ cup ground almonds / walnuts
-4 tbsp desiccated coconut
-2 tbsp coconut oil
-1 – 4 tbsp maple / honey
-Preheat the oven to 180 °
-Peel, core and cube the apple. Add it to the baking dish.
-Add the blueberries to the dish. Squeeze some lemon juice over the fruit. Dust the berry powder and cinnamon over the fruit.
-In a bowl mix the oats, nuts, coconut, oil and liquid sweetener.
-Spread the crumble over fruit.
-Bake for 40 mins or until the crumble is golden and the fruit is soft.
