Haskapa & Goat Cheese Salad Dressing


  • ½ cup fresh goat cheese, softened at room temperature (optional)
  • 2 tbsp Haskapa powder
  • ½ tsp honey
  • 4 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 3 tbsp water
  • 1 tsp coarse salt


Combine all ingredients in a small deep bowl, and whisk vigorously until emulsified. Makes about a cup and a half of dressing, and can keep in the fridge for up to two weeks. Serve over salad, like charred radicchio, cool cooked beets, beet sprouts, thin red onion and pistachios.
