This week marks bonfire night in the UK, and in celebration, nutritional therapist and recipe developer Phoebe Liebling (@_naturalnourishment) has devised these delicious double berry marshmallows.
-1 cup cold water
-1 cup honey
-2tbsp strawberry collagen
-2tsp Haskapa berry powder
-35g chocolate to decorate
-Add 1/2 a cup of water + the honey to a small pan, bring to the gentlest of simmers & leave to reduce for 10 mins
-Meanwhile add the rest of the water to a large bowl, sprinkle over the gelatin & leave to bloom
-Line a tin with parchment
-Now take an electric whisk & dribble some of your honey mix into the gelatin (it may seem like it won’t mix at first). Beat it in gradually & then continue to whip for 10 mins until you have stiff peaks
-Add the collagen, beat in, then fold through the haskapa powder so it swirls
-Decant into your tin, smooth & pop in the fridge for 2-3 hours to set before chopping into pieces
-Serve on skewers, atop hot chocolate or plated & drizzled in milk chocolate
