This week marks bonfire night in the UK, and in celebration, nutritional therapist and recipe developer Phoebe Liebling (@_naturalnourishment) has devised these delicious double berry marshmallows.

Ingredients

1 cup cold water

2.5tbsp gelatin

1 cup honey

2tbsp strawberry collagen

2tsp Haskapa berry powder

35g chocolate to decorate
Directions
Add 1/2 a cup of water + the honey to a small pan, bring to the gentlest of simmers & leave to reduce for 10 mins
Meanwhile add the rest of the water to a large bowl, sprinkle over the gelatin & leave to bloom
Line a tin with parchment
Now take an electric whisk & dribble some of your honey mix into the gelatin (it may seem like it won’t mix at first). Beat it in gradually & then continue to whip for 10 mins until you have stiff peaks
Add the collagen, beat in, then fold through the Haskapa powder so it swirls
Decant into your tin, smooth & pop in the fridge for 2-3 hours to set before chopping into pieces
Serve on skewers, atop hot chocolate or plated & drizzled in milk chocolate
