A colourful cake with a Union flag pattern made using Haskapa

This wonderfully royal-looking cake hits the King's Coronation sweet spot. Easy to make... we think it's a bit of a show-stopper!



Coronation Cake

Ingredients

    • 180g sugar

    • 3 eggs

    • 200g self raising flour

    • 2 tsp vanilla essence

    • 2 tbsp haskapa berry powder (added to half the mixture)

    • 150g softened butter

    • 250g icing sugar

    • 1 tbsp haskapa berry powder

    • 1 tsp vanilla essence

    Directions

      1. Switch on oven and set to 180C

      2. Blend the sugar, eggs and flour to make a smooth cake batter.

      3. Add the vanilla essence then divide the mix in two equal parts

      4. Add the Haskapa powder to one half of the mix

      5. Pour one half into a cake tin, then add the other half and swirl together to make a marbled mix

      6. Bake for 20-25 mins until risen & golden around the edges

      7. Leave to cool

      1. Using a handheld mixer, blend all icing ingredients to make a smooth topping

      2. Using a palette knife, add the icing to the top of the cooled cake

      3. Decorate as in the photo using sliced strawberries and blueberries
