Whipped Ricotta with Honey, Pistachios and Haskapa
A delightful blend of creamy, whipped ricotta topped with honey, crunchy pistachios and Haskapa Berry Powder, adding a burst of tart berry flavour that perfectly complements the smooth ricotta and rich toppings. Serve with your favourite crackers or toasted bread.
In a food processor - add the ricotta, lemon juice, lemon zest from half a lemon, salt, pepper, and olive oil. Blend on high speed until smooth and creamy, about 1-2 minutes.
Spread the whipped ricotta in a shallow serving bowl and set aside.
Drizzle the honey over the whipped ricotta, then top with chopped pistachios, the remaining lemon zest and finally sprinkle the Haskapa Superfood Powder (use a piece of card to get that straight line if you wish!)
Serve with crackers, toasted baguette bread, or pita chips, and enjoy!
